Today for lunch I had brown rice with chickpeas, assorted veggies (cabbage, avocado, carrot, tomato, and cucumber) and baked falafel with tahini. Yum!
I ate this at Juice and Java restaurant, a healthy spot by my house, but this can totally be made at home! Make a falafel batter (here are some recipes: falafel recipes) and instead of frying them just form them into balls, spray or brush them with a little olive oil, and bake! I've done this they taste great!
